Because it's not work? I put like close to 300 hours in New Horizons. It's just pleasant as fuck designing your island and interacting with/collecting the villagers you like. You make of it what you make of it. There's no pressure to do something in a certain timespan.
its work to me. scrambling to complete each days checklist, its just stressful

They are idealized versions of work. It's work you do because you want to. You aren't penalized for being too slow or showing up late. You are appropriately rewarded for your work and your work shows quick direct results. Basically the opposite of many people's relationship with their actual professional work.

Basically it gives you the dopamine hits of work accomplishments while removing all the stress and downsides that frequently actually come with real work. And for many that's very relaxing.
