Basically you just have to play as perfectly as you can and he'll never queue it up. Once he uses Gjallarhorn's Warning that's your notification that Zantetsuken is queued up and you need to stagger him at that point to stop it. Status effects and debuffs can help prevent him from queueing it up as well from what I understand.
