For Land, gather things. For Hand, craft things. You should be able to buy basic crafting materials for any craft under Lv15 at the guild vendor. In general, if you don't have Market Board access or just don't want to rely on others, you want/need to level all of them for long term use. But that's if you decide you want to get in on it, which you don't have to. Locations...
