I know which enemies you're referring to, and they're not so bad. You can't attack them from the front, so you need to get the from the sides and behind, or stomp on them with Mario, and use Rabbid Peach's or Luigi's Sentry. Plus you can reallocate your skill tree at any time outside of a battle to deal with the situation, like having more HP.
