There's a lot of different things you can do here

  • You're probably cooking it too long get a digital thermometer and cook to an internal temperature of 155 and let rest for a few minutes so it can get closer to 165
  • Another tip I could suggest is, The colder your meat is the longer it will take to cook when it hits the frying pan. I do this more often with steak but you could do it with chicken too. Put the meat in a oven at a very low temperature for a few minutes before it hits the pan. We're not trying to cook it here just warm it up a bit.
  • Learn to butterfly your chicken, this will let it cook faster

  • When cooking your chicken don't add it to a cold pan make sure it's sizzling hot
  • Chicken thigh is harder to overcook and it's more tender if you don't mind getting it instead of breast
  • After done cooking, or maybe before, take a look at your chicken you'll notice there's dozens of parallel little lines that run along the whole chicken breast. If you cut your chicken with lines that intersect those then you'll have much more tender meat because you're cutting against the grain.
  • Or you could adopt the Chinese method which is called velveting your chicken. This can be done by mixing your chicken with baking soda and letting it tenderize for 20 minutes, just don't let it tenderize for too long or the meat becomes mushy, that's how effective it is.


Also there's infinite ways of seasoning meat and I've done dozens upon dozens of configurations.
