I've worked at one. At the end of a shift, the manager would count the drawers and put the money in a plastic bag. It's kept in the safe and once a week or so, a bank would send an armored car out to come collect them.

They used actual bank bags with an adhesive strip you'd peel off and seal though, not fucking ziplocs. I find the whole situation very weird. The GM would have murdered someone if they'd been carrying money around like that outside of the office.
