I'm screen shoting your recipie and makong my t-bones like that tonight.Good luck! I havent made t-bones before. Id have a hard time with those too I think. The bone kind of throws things off for me. I usually make filets, top sirloin or ribeye. But if youre worried about temp try a meat thermometer.
