The single biggest aspect of Morrowind's learning curve for me personally was that it took me forever to realize that weapon accuracy is directly tied to stamina. So unless you're playing as a pure mage (something I don't think I could ever do in Morrowind, I'm way too spoiled by magicka regen in Oblivion and Skyrim), when you're starting out, walk slowly in the overworld, and try your best to enter battle with your stamina bar all or mostly full.
Mages don't have it any easier because Fatigue also affects your chance to successfully cast a spell. And even something as mundane as Merchant interactions is influenced by your Fatigue. So if you want to get the most value out of an item you're selling you better have a full bar. It's very strange.
