I find it odd that historians can find ancient artifacts pre-dating the time of Jesus yet they have never to my knowledge found anything from the time of Jesus that proves he existed.

It's extremely difficult to prove the existence of someone who wasn't extremely wealthy, unless they actively wrote diaries. Generally the only way to prove the existence of someone is whether they wrote about themselves or other people wrote about them. Jesus actually has the latter in spades, just none dated from the time he was alive.

It's very likely that someone roughly analogous to Jesus existed but it's difficult to say more than that.
