Pork chops are legitimately the shittiest cut of pork IMO. 90% of the time they're tough and flavorless, need to be covered in sauce, and are a pain in the ass to eat because of bone and grizzle. Shoulder, butt, flank, etc... are all wayyy way better and have a much better taste. Like, perchetta and pernil barely have any seasoning because the meat itself is so flavorful.
