I mean, "Redhead" is an aesthetic that includes hair color but isn't only hair color. Dying your hair red doesn't actually make you a redhead (and yes, I know actresses dye their hair for a role all the time, and even Kirsten Dunst did it)...the thing is, by virtue of this casting, the characters are no longer natural redheads.

Now they're just girls/women who dyed their hair red. It's a different feeling, that's all.

Also, kind of an odd conclusion to draw. I don't mind other hair colors/ethnicities/etc. but it does feel weirdly reductive when nobody seems to mind that redheaded characters are getting weirdly targeted and scrubbed out of film representation lately. Redheads are real people, you know? Don't they also deserve representation?
