How exactly does capital gains tax work with stocks regarding long term and short term? Like if I buy some shares of a stock, is it a 365 day type thing before it turns into long term?
Yes, 365 days/1 year

Also, lets say I buy 20 shares of STOCK in January 2021. Lets say I buy 15 more shares in November of 2022. What happens if I sell all shares in December of 2022? Is it a mix of long term and short term capital gains? Or is it all considered long term?
It would be a mix. The Jan 21 shares being long term, Nov 22 being short.
