You cannot be an attorney in most states if you're not a member of the bar. In most states you need a JD degree in order to sit for the bar.

You need an accounting degree to become eligible to sit for the CPA test, without which you cannot be a CPA. You can do some book keeping here and there, but that's not the same thing.

You need to have a specific engineering degree to sit for the professional engineer exam too. You can still do plumbing and some handyman work and call yourself a "building engineer" without it, but you're not gonna do real engineering work too.
But are those really needed? Would you not have the knowledge to be a successful lawyer, CPA or engineer if you learned everything online for free instead of paying hundreds of thousands of dollars to some school to learn the same facts? Disregarding whatever special pieces of paper you've earned.
