There's not really a unique gathering endgame other than you now get to wear the best gear and collect everything at maximum efficiency. You can farm white scrips for stuff to sell although materia prices are probably pretty low at this point. You can also get legendary nodes to sell those mats.

Another good income source could be aethersands, which you do via aetherial reduction on epheremal nodes (what a hell of a fucking sentence).

Basically these are a different type of timed node that are active for four ET hours. Between Botanist and Miner, there is always one up somewhere. Unlike the scrip nodes they replenish like normal nodes during that timeframe so you can gather as much as you want. The goal here is to gather at maximum collectability and then use the aetherial reduction ability to break it down, which will give you crystals and/or aethersand to sell. So it's very farmable and the only limiting factor is GP. It's very easy to do now too, although that might mean it's not as lucrative as it once was.
