And you really got two options for Lorenz. Physical Lorenz and Magic Lorenz.

Physical Lorenz is very straightforward.
Nobel -> Fighter -> Brigand -> Cavalier -> Paladin.
Like nearly every Physical attacker you want to raise axes enough to cert in Brigand (D+ works) so you can get Death Blow. Besides that the skills he wants are Lances, Riding, and Authority. He'll operate like any Cavalier but will just be less good. He will have a weaker Frozen Lance though to heavy chip high defense enemies.

Magic Lorenz has similar two end options with similar paths.
Noble -> Monk -> Mage -> Cavalier -> Paladin
Noble -> Monk -> Mage -> Warlock -> Dark Knight

Mastering Monk and Mage are both essential to increase fire power. The Cavalier set is going to do one thing and one thing only, spam Frozen Lance, you can use big heavy weapons (like Steel+) since the goal is to OHKO so you getting doubled isn't too much a concern. I would carry a light weapon anyway to stop being doubled if you can't kill any enemy and are just going to Chip instead. This build will give Lorenz his single biggest damage, but lacks variety. Skill wise you need enough Reason to Cert into Mage. Beyond that focus on Lance, Riding, and Authority. Fun fact: Marianne can operate can do this build better, but she'll go Falcon Knight instead of Paladin.

Dark Knight Lorenz is basically raised like any other Dark Knight. Start focusing on Reason and never stop. Get Lance to C+ for Frozen Lance then forget it. Train Riding via Group Activities, Goals, and Instruction, since he can't grow the skill in combat. Authority is your other skill to focus on. This set gives less raw damage than the Magic Paladin in exchange for versatility.

Or just make him the dancer. Though his horrible base 3 charm makes that annoying.
