it's not. Human muscle is generally distinct from from the surrounding adipose tissue. Even in fat people, you don't see fat intermixed with muscle like you see in cow meat. Human meat would probably be very tough and difficult to chew unless you slow cook it like brisket.

As for the belly, maybe that could be similar. Pork belly is mostly fat with a little bit of muscle. Humans are kind of similar. Good abdominal fat pad with some underlying (and not very thick) abdominal muscle.
