Seems we have fairly similar taste, so some of my favorites that you don't have on your list: Monster, Code Geass, Neon Genesis Evangelion, and if you haven't seen the Brotherhood edition of Fullmetal Alchemist, I think it's better than the first FMA anime.
We do. I'll probably look a few of those up, especially the ones that other people have suggested too.

I love Black Lagoon and Cowboy Bebop. They're both very worth checking out. They've got a similar sorta vibe to them, with a plucky crew travelling about on adventures, albeit one now in the South China Sea on a boat and the other in the future in a space ship. They're both really fun though. Steins;Gate is pretty enjoyable too.

I am not a huge anime fan. Most of them I sorta watch once then just never want to go back to. I feel like the odd one that hooks me must be good. The only arguably "junk food" one I like is Dragon Ball, but a lot of that is nostalgia.
I've been eyeing these too. I've tried to watch Cowboy Bebop soooo many times. I will eventually get through it and probably love it because I loved Samurai Champloo.

Ok, I know I didn't exactly give a glowing review of Parasyte in my recommendation, but thinking about it more retroactively there's a lot of good moments in it about what it means to be human... the most apropos scene being the dog.
I do like existential themes so maybe I'd like it.
