Pence cannot become President through the 25th Amendment, he can only become Acting President. Trump could then immediately request reinstatement, and if Pence continued to object, Congress would have to vote on it, with a 2/3rds majority of both houses required to maintain Pence as Acting President.

The sole saving grace here is that Pence has 4 days to respond to Trump's request for reinstatement and then Congress has 21 days to vote, and Trump is out in less than 2 weeks. If either house could avoid calling a vote, Trump could not resume his duties as President before his term ended.

The only way to permanently remove a sitting President is through impeachment.
