The flavor is often determined more by the fat used to grind in that the meat itself. So often since beef fat is used deer (if proper cleaning was done to remove lymph glands), cow and bison will taste far to similar for anyone not born with a golden pallette.

That being said home made veggie burgers will often taste better (mushroom, tofu, bell pepper, and oats) as they will have a flavor profile that is different. Store bought veggie patties have to many additives and smell like bile.
