Switching back and forth is what breaks the immersion for me.

I think youre overselling this completely but you do you. Whats an example of this happening to you?

Think back to the first gameplay trailer

At around the 8:20 mark. Look how dynamic and interesting the changing camera makes that scene. You think brushing your teeth in first person is better than dynamic shots of your apartment? Theres no dialogue needed for V to wake up from a one night stand but seeing it from a third party gives a lot more feeling and context than any First Person angle could accomplish.

Games off the top of my head like the latest Far Cry. You basically never see your main characters face. Ever. Having competed 3/4/5 I couldnt tell you a single thing about those main characters. All the interesting moments are the over the top antagonists getting all up in your face and hamming it up. Thats basically the only move they have in that series. Uncomfortable closeups of psychos. Its a jarring but ultimately forgettable experience as far as the main character is concerned.

Unique camera angles can absolutely make a scene. And if youre putting potentially dozens upon dozens of hours into a game, you want shit to stand out and you want interesting moments.

The thing is the trailer is like 95% in first person. But checking back in with your character and actually seeing them react, and interact with the world around them form an outside perspective once in a while, to me, is a much needed break. And like I said earlier. You can accomplish a lot with new camera angles when no dialogue is even necessary.

As for movies, they don't typically cast the viewer as the main character so I don't see much point in making that comparison in this context.

Well this is just wrong. Often the protagonist, or one particular character is a vehicle for the audience to have exposition or word building thrown at.
