This may be a bias, because I grew up 6 blocks from In-n-Out #3 in Pasadena, but the further you get from the "core" 5-7, the quality changes. Not necessarily worse, but different.

I went to the Sacramento, Inglewood and another one and it was vastly different. The burgers and sometimes fries were WAY overcooked.

At the Pasadena, Arcadia (#2 or #4) & Azusa (#5 or #6) In-n-Outs the burgers are cooked medium rare to medium. They're juicier and more flavorful. The Rialto In-n-Out does it that way too (don't know the #. There's probably well over 100 now - something Snyder, the founder never wanted but his granddaughter, the current owner apparently said "fuck it".)

EDIT: The Hollywood In-n-Out does it right too, but if I'm in Hollywood I'm going to FATBURGER.
