I'm not an expert but historically what happens is that the results just take a long time to process, and typically that means write-ins and early votes get processed irregularly or later. The actual labor to quickly do this on the night of the election doesn't exist. What you typically see is not usually enough to significantly alter the results but margins closing or widening over a period of days- which in close races can make a difference.

For a more recent example you can look at the primaries where it took days or even weeks to get the final votals. And some of that was due to fuckery, and a lot of it was just because that's how it is.

Full Iowa is maybe an exaggeration, but extend something similar to the entire country.
