I think you could pick choices for UBW before finishing Fate, but it would bad end you; they could easily still keep that and no content would be lost. Just about everything Fate is fine to experience without reading the full VN, they're all disconnected. The only exception I can think of is Hollow Ataraxia since it's an actual sequel.
