Going back to your original inquiry, I'd like to recommend some more recent anime that I would consider modern "classics", in that they're shows that will stand the test of time and aren't just seasonal hits (which I like plenty of, don't get me wrong, but there's a difference). Not a statement against the mid 2000s and teens stuff, it's just that stuff has been recommended to death and you've likely already heard of them all (although nobody has mentioned Baccano, which absolutely falls into the category of a classic). Like nobody has to make a point to recommend Brotherhood or Titan or Steins;Gate, everyone knows those shows, even if the last one is my #1 series.

Also avoiding stuff that's ongoing. Re:Zero literally just started a second season a couple days ago. Some of these could get further seasons, but nothing on that yet. This is also all personal opinion of course.
