X570 is relatively stable, but has its own issues, namely the active cooler on the chipset, which are usually relatively cheaply made fans that offer another point of failure on the motherboard. B550 has a passive cooler (heatsinks) which utilise the air drawn in from the intake fans to pull heat away from the chipset.

Another point of consideration is how both motherboards split up PCIe lanes. It won't matter to anybody but the most anal power user people, but X570 has more PCIe lanes than B550. You still get your typical x16 slot in B550, but PCIe expansion slots split up the lanes. I can't remember the exact specifics, but it likely won't mean jack fuck to you.

Basically, it's like this:

B550: More expensive than it ought to be, fewer features than X570, passive cooling on the chipset, fewer PCIe lanes, will be a bit unstable until BIOS revisions address it.

X570: Most expensive, full suite of capabilities, active cooler on the chipset, more stable because it's been out longer.

I would go with B550 if it were cheaper. I'm somewhat of a power user, so I'd be okay with having to deal with the odd squibble. All that matters is your budget, though.
