I was way overleveled for the main quests because I spent so much time exploring and sidequesting. But on the flip side, if you rush the story, you'll be overleveled for the side quests. Just do the best you can to keep a nice balance.

Don't rush the story, definitely spend time exploring. Go around, fuck around with some question marks, die a few times taking on a challenging foe. It's an open-world game, don't rush the story is the only real advice that can be given.

Most items don't actually count towards your weight total. No real need to worry about over-collecting anything. I will say I did put a point into the "strong back" skill for emergency purposes (i.e. away from marking points when inventory fills up). It's worth putting the point into so you can throw the skill on if you need it for a bit, then take it off when you get back into town to sell.

Should I be dismantling/crafting?
In my experience, dismantling makes no sense. It's expensive and not worth the materials you get. Maybe more seasoned players can elaborate, but I almost never did it.

Crafting is good if you see something you like and can use, sure. And you can only craft the Witcher sets. But in general, you're more likely to stumble upon better gear in your travels.
