Usually when you go to court to contest speeding, you can, or so I've been told, demand that they provide the serial number for the device they used to clock you and the last time that device was calibrated. Also, there's always the off-chance the cop won't show.

Also most cops won't even bother giving you a ticket for anything within 2-5 over because it ain't worth they time and some cars speedometers aren't calibrated correctly, so I can think I'm going 25 because that's what the needle says but the cops LIDAR is tracking me going 27 or so

You can also argue it if they don't regularly pull people over for only going 2 miles over the speed limit, as most cops typically don't.
