Castlevania struggled with 3D really. Castlevania 64 and Legacy of Darkness were hit or miss, though they did find their base later. At the time of development for Lament of Innocence Igarashi probably wanted to go hard, and of the two consoles that were going to be viable at the the time PS2 was the better choice. That being said, Castlevania never caught as a 3D game, despite the reception 3D games had. They always felt better as 2D platformers, and while that was certainly well within Gamecube's reach, and considering how they could have done something like Dracula X Chronicles, which was a missed opportunity honestly, it was just accepted that the way to go was handheld.
