Apparently most mainland Europeans don't refrigerate their eggs. That's because in the US they wash eggs with disinfectant to kill any Salmonella bacteria on the shells, but this removes a thin outer protective layer from the egg, which means they must be refrigerated from then on to prevent any remaining bacteria from penetrating the shell. In most of Europe they vaccinate chickens against Salmonella so they never get infected in the first place so they don't need to wash the eggs. With the outer cuticle intact, the eggs don't require refrigeration.

Refrigerated eggs will last longer, but they will also soak up odors from the fridge and cold eggs don't work as well in certain baked goods.
