"Wheat" bread is one of those things like "juice" where you have to pay close attention to the wording and ingredient list.

Most bread is made with wheat flour, so technically it's all "wheat" bread, even if it's just white flour and food coloring. Even "whole wheat" just means it contains a non-zero quantity of whole wheat flour. If it doesn't say "100% whole wheat", it probably isn't. And "multigrain" doesn't necessarily mean 100% whole grain, either.

Almost all commercial mass-produced pumpernickel is made with food coloring as well. The real thing is baked for over 16 to 24 hours which caramelizes the sugars in the rye, turning it dark brown.
