It's because simple yellow gets put on sandwiches and that's too strong a flavor/too little liquid for the amount needed for the optimal added hydration to counteract dry bread and not so hydrated meat. A simple bologna sandwich goes down fine with mayo, replace mayo with yellow mustard and you may as well pull a hot dog contest move and dunk it in water if you want to get it down.
