I thought reduced meat consumption was proven better for health? Not to mention there's much less processed foods if you're vegan

It is definitely healthier in the long run, but however since the technology for clean meat has been kicking into gear lately that Meat will essentially be just as healthy as vegan food later in the future.

It's small technology, but it is currently spreading and clean fish food is also on the way as well.

I wouldn't say it's healthier. I have a cousin that does guided tours in the wilderness in Michigan or Minnesota, I don't remember which, who was forced to start eating meat. She was a vegan for years and said basically in the winters there if you don't eat meat you will die. There is no way she would start eating meat again after years if she didn't feel she absolutely had to. I would say death isn't the healthier option here.
