i thought it was toxicity levels cause them potions are like drug enhancements for a period of time. the black eyes indicated the potency of the potion. some say im the series each potion has different side effects. heres why...

it was a way for witchers to be supereffective when dealing damage to certain types of monsters. potions for every monster. the thing preventing witchers from overusing them potions is the toxicity levels. they poison themselves to deal with the monsters. 1 drink is usually enough but if a witcher drank too much in a short time, the witcher's body cannot take that many potions and the witchers body destroys itself.
