You should always have at least two in case one fails you for whatever reason (reader malfunction, bank locks it for suspicious activity, etc)

A third is optional for sure and might help your score. But instead of going for a generic card, there's other ways to boost the "revolving" category of your credit. Like a personal line of credit which usually offers lower interest than a card.
