A chicken sandwich is the normal phrase. Must be an American thing. In Australia, "burger" refers to the bun. You can have a beef burger, chicken burger, vegan burger, lamb burger... a chicken sandwich would be chicken/lettuce/cheese etc between two pieces of bread.
