Frostfall and it's associated mods if you want a sort of survival experience. Just check Nexus for soem of the more popular ones. Zeus posted... Are all the mods through Steam? I picked up the ES Collection a while back -- normal PC version, not Steam -- and kinda want to mod it whenever I get around to playing it but I'm not sure how any of that would work with Steam.
