Depends on what your mainly interest in. Order works, but you can probably skip a bunch of them if you don't care about some stories. If you want to understand the Defenders, then I would say you at least need to watch the first 2 seasons of Daredevil and maybe the first season of Luke Cage. Everything else doesn't really play a part in the plot. Defenders is basically Daredevil season 2.5 with some Luke Cage sprinkled in.

Punisher is kind of on an island by itself, you can watch that whenever you want (even before Daredevil S2 even though the character is introduced then).

Iron Fist is definitely the most skip-able of all of the shows, both in plot significance and quality.

This is pretty much accurate. Iron Fist and JJ really only function to build their respective characters (JJ is actually good though). Daredevil really serves as the main vehicle for the plot of the entire thing. Punisher doesn't take part in Defenders and so it really doesn't matter when you watch that. And honestly you could probably just read a summary of Iron First season 1 if you want because it moves so slow and the characters don't really get interesting or have much development until season 2.
