Because you find it entertaining. Same reason any piece of entertainment gets watched.

Personally, I'm actually not huge on the whole let's play/streaming thing, for basically the same reasons you're presenting. I'd generally rather play games than watch them. I have enjoyed watching some, though. For something like Dark Souls, it can be interesting to see how somebody's build idea pans out, and their commentary on it is an essential part of keeping me engaged with that. For something like Minecraft or Factorio, it can be interesting to see people's construction process, and their commentary is needed to understand where they're going with it. For me, most of it boils down to the question of "let's see how this person handles this," which limits it to games with challenges that will apply to every player, as well as an open-ended suite of options with which to tackle them.
