Restaurants have these policies because in your standard robbery situation the best course of action is to give them the money and get them out of the building asap. 99% of robbers only want cash, and some would-be hero pulling their gun will only make the situation more volatile. Obviously this situation wasn't a robbery so that doesn't apply so well, but it's the outlier.
