If the weapons didn't break, it would be pointless to have so many in the game since people would just keep swapping out for the highest damage one they can get at the time, maybe with a few exceptions like the elemental ones. It also encourages you to sneak up on camps and use other methods to get some early damage on foes, instead of just running around guns (swords?) blazing. And there are a lot of creative ways to do that, so in that sense, I think it helps to facilitate the gameplay principles everyone praises about BotW more than they realize.
