Like if I make a thin batter they're the same as all the others in that batch. How does that work? Why does it even out to the same height

because it has to do with how thin or thick the batter is.

make a pancake, thin or thicken the batter, and make another pancake, it'll be thinner or thicker than the last one.

Yeah but how to change thickness without changing batter

Adding more liquid like milk can make it thinner. Adding more of the powder for the batter can make it thicker. So, you're not changing ge batter, but altering it...
