if you can just destroy what looks like a ship more than 100X the size of the ship you're using to ram with light speed, they should be doing that all the time.

no, they can't. The rebellion has always had a limited number of ships they can use. They can't just suicide their ships all the time. In fact, I bet when a battle is over they go scavenge the battle site for parts and what not. Assuming not everything just blows up like it does in the movies.

This is assuming every battle the Rebels fight they don't lose any spacecraft.

If they are fighting an large enemy in which they are losing multiple spacecraft anyway, they could just light speed one of their ships into the enemy so the rest can survive or escape.

How about that beginning scene where they lose like 15 snail like bombers which can only drop bombs straight down in 0 gravity. Autopilot light speed one of the bombers into the enemy ship instead if making that agonizingly slow flight with 15 of your ships.

Or if the first order uses that lightspeed tracking again they'll just lightspeed ram one of their ships into the enemy ship so they rest of the ships can escape.

The issue is introducing that lightspeed ramming is a viable weapon opens a huge can of worms into how combat is approached in the Star Wars universe.
