For legends books, the X-Wing series and Thrawn Trilogy are really highly regarded, though I haven't personally read them. The first Darth Bane book, The Revenge of the Sith novelization, and Labyrinth of Evil are some of my favourites and are really highly regarded. I think Plagueis is also supposed to be really good and fit pretty well with the new canon.

Of the canon books, I think Lost Stars is one of the most popular though I wasn't smitten with it. After the first third or so they start blowing through content at breakneck speed and cover the entire OT really fast. It makes it annoying when they constantly bump into minor Star Wars characters and events every few pages.

Catalyst isn't really a great story, but I enjoyed it for the extra perspective it offers on Galen Erso and Orson Krennic from Rogue One, especially Krennic. Thrawn was okay. I'm reading Tarkin now, I think it's supposed to be okay. I hear Phasma is really good.

The new canon comics are supposed to be better than the novels I think. The Darth Vader comics (both series) are really popular. There's also "Star Wars", which follows Luke, Han and Leia during the rebellion. Plus a few comic mini series covering various characters. Honestly I think all the new Star Wars comics are supposed to be really good.
