I was hungry, and improvised this with things I had at home.

It's a Tacos Al Pastor inspired chicken with asian twist.

I had chicken breast I cut into pieces. I made a marinade which is the tacos al pastor inspired.
The marinade had the basics of it: Pineapple and soaked dried chilies. I had some pineapple pieces in the freezer, I blended that with our own dried chillies that I had soaked in warm water first (4 kinds), onion, garlic, thai basil, golden mountain sauce (it's like soy), salt, lime juice and some sugar.

Added bit of olive oil in it too, then poured it over the chicken to marinade.

The rice is jasmine rice, that I flavored with some left over thai basil and the stalks on top of the rice (removed them when it was done).

The chicken was removed from the marinade, cooked in oil, salt and pepper, added the rest of the marinade let that cook a bit. Removed the chicken from the pan, tossed away the oil marinade mix, then had the chicken back in a dry pan to cook them a bit, tossed in some chopped thai basil quick and a squeeze of lime.

It was tasty as fuck! It had the Tacos Al Pastor hint of flavors with the subtle pineapple mixed with the heat and flavor of chili. What surprised me the most was how awesome pineapple and that basil works with eachother.

Amazing dish.
