That should be fine, yeah. I've got a rice cooker so I rarely mess with my crock pot for that exact matter.

imo just make "rice" - most slow cooker rice recipes call for 2c water for every 1c rice. And then throw some diced/stripped chicken in there after the rice has been added. Chicken shouldn't need (or create) any extra moisture. For flavor's sake you can make the rice water 50/50 chicken broth if you want.
