Pressure sensitive buttons sounds not horrible, but I cant think of a single game where it was used well. Mostly it ends up being like Ace Combat 5 or Need for Speed: HP2 where you just have to hold the button down really hard or you won't go full speed.
In almost every instance buttons are used as an on/off thing, so they should read input that way as well.
