Let's see, to hype and describe some of the ones listed in topic:
Demon's Souls: A sort of action rpg, known for high difficulty but extremely rewarding. Definitely one of the best PS3 exclusives, and Dark Souls is a spiritual sequel that you should check out for either it or 360 if you haven't.
Yakuza 3/4: A bit like Shenmue in that it's got a lot of open world exploring, beat-em-up action, and story... but a lot, lot more refined and all around better. Great characters and story, combat's satisfying, leveling up and learning new moves gives a good sense of progression, and loads of optional side material and minigames when you want it.
Valkyria Chronicles: Really unique, it's... a strategy real time/turn based third person shooter rpg? Almost everything pretty high quality in it, and it almost always manages to change things up in an exciting way from story to gameplay, which is always good.
