Some of those have to at least be approved of by the writers so I'm going with both. My favorite is Beckett: "You know Chinese?" Castle: "I picked it up from a TV show"
As far as actors go. Jewel Staite continued to work in Sci-fi, becoming a main cast person on Stargate Atlantis and then doing some Syfy movies. Gina has done some movies and is now in Suits. I think she took a little time off at first to be with her husband: Morpheus (yeah, Gina is married to Laurence Fishburne). I can't think of any big roles for the rest of the cast except Tudyk was the voice of the robot in I Robot.
