Umihara Kawase Shun Second Edition?
It's an import and obviously not in english but it's a cult physics based platformer where you hook onto objects with a fishing pole and swing/bounce off of them to get past obstacles. There's multiple routes through the game, and multiple ways of approaching levels based on your skill level. And there's a replay feature. Also I think it's supposed to have all the levels from the SNES and PSX versions of the game.

I guess there's also Solatorobo: Red the Hunter, although that kind of skews towards a younger demographic and is rather simple/easy.
