But yeah some people just aren't tomato people. For me tomato isn't so much about the taste it adds as much as everything else. It makes the burger and sandwich juicier for example.
But I guess for me it's the type of meat that determines sauce.
Red met requires a red sauce, but chicken is much better in a cream sauce.
The one exception to this is that chicken spaghetti in a red sauce is great if you make it very very very spicy. Absolutely amazing. That is just if you are in the mood for spicy, since a spicy chicken pasta with a cream sauce would pretty much defeat the purpose.
